De ober bleef het eten serveren en trok zich toen terug.

Het restaurant was ontworpen met privéruimte in gedachten, en er zat ook een soort artistieke sfeer in de indeling. Silvia wilde niet dat al haar klanten uit de hogere klasse zouden komen. Of ze een klant verwelkomde of niet, hing af van haar stemming en de indruk die ze van hen had.

Degenen die er aten waren ofwel vaste gasten of mensen wiens karakter de eigenaar en chef-kok beviel. Ongeacht hoeveel geld iemand te bieden had, als hun houding niet op peil was en ze van lage verdienste waren, zouden ze de speciale kookkunsten van de chef-kok niet kunnen ervaren.
